Since I found the recipe for a gluten-free cake from Nadia, I have used it as a base for many different cakes. I'm changing some of the ingredients and flavoring and voila you get a variety of delicious cakes. Today's cake is flavored with apple, lemon and cardamom, and I served the cake with whipped coconut milk spiced with cardamom.
Gluten-free Apple Cardamom Cake
2 eggs
3 tbsp coconut oil
3/4 dl coconut sugar
0,5 tsp vanilla
1,5 tbsp lemon juice
zest of 0,5 lemon
2 dl almond flour
3 tbsp coconut flour
1 tsp baking powder
0,5 tsp cardamom, ground
1-2 apples, grated
Preheat the oven to 160 C. Whisk together the eggs and
coconut oil. Add coconut sugar, vanilla, lemon juice and lemon zest, stir. Add
the remaining ingredients and mix until the batter is smooth. Pour the batter
into a cake tin (16 cm) lined with parchment paper. Bake for about 20 minutes.
Glutenfri Äpple Kardemummakaka
2 ägg
3 msk kokosolja
3/4 dl kokossocker
0,5 tsk vanilj
1,5 msk citronsaft
skal av 0,5 citron
2 dl mandelmjöl
3 msk kokosmjöl
1 tsk bakpulver
0,5 tsk kardemumma, mald
1-2 äpplen, rivna
Värm ugnen till 160 C. Vispa ihop ägg och kokosolja. Blanda
i kokossocker, vanilj, citronsaft och citronskal. Tillsätt de övriga
ingredienserna och blanda tills smeten är slät. Häll smeten i en kakform (16
cm) klädd med bakplåtspapper. Grädda i ca 20 minuter.
