A fresh and easy meal is appreciated when you do not have time to make anything advanced. A taboule made with cauliflower instead of bulgur. This is a great meal to take on a picnic or have on a buffet table.
Cauliflower Tabbouleh
1 medium head of cauliflower
2 dl watercress or parsley, chopped
1 red onion, finely chopped
2 tomatoes, chopped
1 small cucumber, chopped
lemon juice of on lemon
1 tsp apple cider vinegar
2 tbsp extra-virgin olive oil
0.5-1 teaspoon fine sea salt
pinch of black pepper
Cut the cauliflower to remove the stem and then chop into pieces. Place the cauliflower in the food processor and pulse until the cauliflower pieces turn into "rice”.
Pour into a bowl and add the remaining ingredients and mix. Taste and season to taste. Put in the fridge before serving.
Blomkåls-Taboulé
1 mediumstor blomkål
2 dl vattenkrasse eller persilja, hackad
1 rödlök, fint hackad
2 tomater, hackade
1 liten gurka, hackad
citronsaft av en citron
1 tsk äppelcidervinäger
2 msk extra virgin olivolja
0,5-1 tsk havssalt
en nypa svartpeppar
Skär blomkålen för att ta bort stammen och skär i bitar. Lägg blomkålen i en matberedare och mixa tills blomkålen förvandlas till “ris". Häll i en skål och tillsätt övriga ingredienser och blanda. Smaka av och krydda efter smak. Ställ i kylen före servering.
